Is it allowed for me to eat meat sold by Muslim employees in a meat shop if they tell me it is Halal, even if they are not the actual owners of the shop and I do not know the real owner myself?

If you trust the Muslim who tells you that it is Halal, then you can take it as Halal as far as he knows the source of the meat.

As long as the animal is alive at the time of slaughtering, its meata would be halal. 

And Allah knows best
If someone says a matter is Halal and another source says it a Haram then how do I decide which one is right? Can I pick whichever seems more logical to my mind?

No one has a right to pick in Islamic rules whatever he feels more logical for him. We must obey Allah even if our thinking based on our limited knowledge does not digest it. The orders of Allah are taken from the Prophet (SAWA) and his Holy Progeny Ahlul Bayt (AS). You need to follow the most highest scholar ( Marje' of Taqleed) to seek guidance.

Very often restaurants in the west fry their vegetarian products in the same oil as non-halal meat products. Is it okay to eat? If we don't know if this takes place, are we required to ask at each restaurant?

Bismillah, 

If one knows that a product is fried with non-halal meat, then it would become najis (impure) and haram to eat. If one didn't know then there is no sin upon them.
