As a student planning a Mut'a marriage, I am facing difficulties because the girl's father has denied permission by placing a very high Mahr and also wants her to finish her education first. In this context, is it allowed to proceed without his consent?

Education is not an obstacle for marriage, and will not hinder a person in finishing their degree. However, why would you plan to do mut'ah. Why don't you marry her, and maybe postpone the wedding and moving in until both of you are ready. At least you will be halal to each other. 

To answer your question, no, it is not allowed to proceed without his consent. Neither of you should even think about taking things into your own hands and doing things outside the conventional way of how people marry. 

Consider all other options, and consult with respectful elders and scholars before you take any steps in this.

Muslim wife's consent is necessary for her husband to engage in Mut'ah with a woman from People of Book (Christian, Jews, Majos).

If the time period is over, you must recite a new contract, with new time-period and new mahr.

If you still have some time left for the temporary contract (let's say2 days left), and you both decide to extend, the man frees the woman for the remaining period, then recite the new contract together.

Is it permissible to enter into a temporary Mutah marriage through conversation if we are in different countries and plan to marry permanently after two years? If so, what should I say to initiate this arrangement?

Intimate talk between male and female is not permissible with out Mut’a;h agreement (Aqd). You both should agree for a time frame and Mahr (Dowert) then recite the Agreement if Mut;ah either yourselves or through your proxies.
