For a person who has Qadha of obligatory prayers undone yet, Nawaafil and recommended prayers are permissible and valid provided it does not hold you or make you neglect performing your obligatory Qadha.

Your priority is fulfilling your wajib, and then turning to nawafil. If you were to pray your qadha` prayers during the time of your nawafil, you will also be granted reward as well. So, as long as you have qadha` prayers, you should not be doing nawafil, and with a good routine for qadha' prayers you will be able to finish it in an adequate time.

Qunoot as Qunoot should be in Arabic according to the precaution, but Du'a , any Du'a (supplication) is permissible during Prayers in any language.

Yes, it is correct that the Nafilah prayers can be performed while
sitting or walking. It can be done simply by reciting Surah Al Hamd
and optionally another Surah after it, which is not compulsory. Then
in the position of sitting, to bend for Ruku ; and then to bow for
Sujood. If it is being performed while walking, there is no
condition to face the Qiblah and the Rukoo' and the Sujood can be
performed by a slight bending of the head for Ruku and a little bit
more bending of the head for Sujood or even by bending the head or the eyes.

Yes. Every Nafilah Prayer is usually two Rak'ats like Fajr Prayer, but Nafilah Prayer can be performed with reciting Sura Al-Hamd only with out other Sura, although it is better to recite another Sura in Nafilah, while it is obligatory in Fajr Prayers to recite another Sura after Sura Al-Hamd.
Nafilah Prayer can be recited while sitting with out illness and even while walking intentionally, and when it is recited while walking, no need to face Qibla. There are other facilities in Nafilah Prayers.

If the time of congregational prayers does not allow you to perform Nafilah of Zohr or/ and Nafilah of Asr, then you can perform the Nafilah after the Jama'at prayers is over, with the Niyyah of Qadha.
You will then get the reward of Jama'at and the reward of performing the Nafilah.
If you have little time which will kot be enough to perform the whole eight Rak'ats of the Nafilah, you can perform few Rak'ats like 2 or 4 Rak'ats.

In such cases when there is not enough time to recite the full Nafilah of Zoh or Asr, you can pray just 4 or even 2 Rak'ats as Nafilah for each Zohr and Asr. If you could not find time , then you can recite the Nafilah later on as Qadha.

Nafilah of Ishaa is either two Raka'ats in sitting position or one Raka'at
in standing position, though the 2 Raka'ats in sitting position is
better.
In the 2 Raka'ats of sitting position, you perform the Ruku' by bending
forward in the sitting position and recite ‘Subhana Rabbay al Adheem
wa Bihamdih , then sitting straight again and then going for Sujood
twice, then sitting again for the 2nd Rakaat like the 1st Rakaat.
If you opt to perform it in the standing position, it is just one
Rakaat with Surah al Fateha and 1 other Surah, then Qunoot, then
Rukoo, then the 2 Sajdah.
